One-bowl Banana Chocolate Chip Cookies

These cookies are crunchy, but still have just the right amount of softness, and are absolutely packed with sweet, double-chocolately goodness. Bonus: it’s all made in one bowl, just throw everything in, stir, and pop in your oven!

I love weekends.

 I got to run in the drizzling rain while pushing my siblings in the double stroller, and enjoying the company of my parents as well.

I got to do some shopping with my 16 year old brother (perks of a brother who can drive!), more shopping/hanging out with the fam, baking, and just enjoying the whole NO SCHOOL-NO WORRIES happiness that brings me oh some much joy. (needless to say, school is not thatttt bad) 🙂

We had 2 brown bananas just ready to be made into something, so my mommy handed me the task of making, well anything, out of the lonely bananas! (my first thought for these bananas was healthy cake batter blondies – hmmm?)

I did some Pinterest searching and stumbled across a few recipes to give me ideas and proportions. My little sis said she wanted cookies, so that helped narrow it down.

I tried to make these pictures a little better than my previous pictures. I worked really hard and tested out a bunch of different backgrounds.

I, for sure, still need a lot of work on my food photography skills, but I hope these look more appealing and scrumptious! *shout out to my little brother for letting me pour him a glass of chocolate milk … and extensively photographing it with the cookies* 

I am not one for dry, “breakfast like” banana cookies when I am really wanting something that’s well… an actual cookie. A cookie that melts in your mouth and only leaves you wanting more and more and more. These did not come close to disappointing, perfectly crunchy and flavor-filled with just the right amount of softness! They’re not exactly healthy, but definitely not too bad.

 

One-bowl Banana, Double-Chocolate Cookies

  • 2 mashed bananas
  • 1 cup of gluten free flour (I used a home-made blend of white rice flour, cornstarch, tapioca starch, and xatham gum-let me know if you would like the recipe)
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking soda
  • 1 egg
  • 1/2 cup of room temperature (easily stir-able) Coconut oil
  • 1/2 cup of Truvia blend sugar (or granulated sweetener of choice)
  • 1/2 cup plus 1 tbl. of brown sugar (feel free to use less sugar, I based these proportions off of other recipes and wanted to get the right texture. You can experiment with less or different sugars!)
  • 1/3 cup of peanut butter
  • 1/2 tsp. of salt
  • up to 1 tsp. of cinnamon
  • 1 tbl. maple syrup
  • 2 cups of dry oats
  • 1 cup: white chocolate and/or chocolate chips
Start with mashing your bananas (with a fork) and continue to add ingredients in slowly until everything is well combined. Bake at 350 degrees for about 10-12 minutes until lightly browned and no longer gooey. Let cool for about 5-10 minutes, and enjoy!
